Tween is produced by reacting sorbitol (Sorbitol) with a fatty acid such as lauric, palmitic, stearic or oleic acid to form an dehydrated sorbitan ester, which is then polymerised with Ethylene Oxide. Its molecular structure includes:
Hydrophilic part: Polyoxyethylene chain.
Hydrophobic part: fatty acid chain.
