Span is a class of nonionic surfactants chemically known as sorbitan fatty acid esters. It is made from sorbitol and fatty acids (such as lauric acid, palmitic acid, stearic acid, oleic acid, etc.) through esterification. Depending on the fatty acid chain, Spectra is divided into various types, such as Spectra 20, 40, 60, 80, etc. The numbers represent the carbon chain length and saturation of fatty acids.
Main Characteristics:
Non-ionic surfactant: non-ionisation in water, high stability, suitable for a wide range of pH environments.
Excellent emulsification performance: able to stabilise oil-water system and form oil-in-water (O/W) or water-in-oil (W/O) emulsion.
Wide range of HLB values: different models of Spectrum have different hydrophilic and lipophilic balance values (HLB values), suitable for a variety of emulsification systems.
Good dispersibility and wettability: widely used in industrial, food, pharmaceutical and cosmetic fields.

Food industry: as emulsifier and stabiliser for ice cream, cream, chocolate and other products.
